Ham and Egg Crepe Square
French toast, fruit, eggs, bacon, omelets, and Danishes are all delicious foods you could serve at your brunch. Don’t forget the tea, coffee, and mimosas! One unique recipe you could serve is this Ham and Egg Crepe Square:

For the crepes:
  • ¾ cup and 2 tbsp. whole milk
  • 5 tbsp. unsalted butter, melted
  • 2 large eggs
  • 1 cup and 2 tbsp. all-purpose flour
  • ¼   tsp. salt
  • 3 tbsp. canola oil
  • Confectioners' sugar
For the filling:
  • 8 slices black forest ham
  • 4 large eggs
  • Coarse salt and ground pepper
  • Chopped fresh chives
Make the crepe batter first. Whisk milk, 1/2 cup water, 2 tablespoons of butter and eggs in a bowl. Whisk in flour and salt and set aside. Stir the remaining ¾ cup butter and oil in a bowl, reserving 1/4 cup for cooking. Heat a nonstick skillet and warm the remaining butter/oil. Pour 1/4 cup batter into pan and cook until lightly browned. Flip and cook again. Transfer to plate and continue through the rest of the batter.

Preheat oven to 350 degrees. Place 4 crepes on a rimmed baking sheet. Place 2 slices ham on each crepe. Crack 1 egg into center of each; fold edges toward center. Season with salt and pepper. Bake until egg white is set and yolk is still runny, 12 minutes. Top with chives.

Keep the party bright and cheerful so that all guests have a good time and don't forget to schedule a thoughtful Mother's Day eCard!
